#Butternutsquash and #parsnip #soup with #thyme! So #easy, super #tasty. If you have a blender you can make this: Set oven to 375 degrees. Cut one butternut squash in 8 pieces, start with halving it from top to bottom. Cut 2 parsnips in 6 pieces each the same way and place veggies in buttered baking dish. Chop garlic and thyme and sprinkle on top of veggies. Cover with foil and bake for 50mins. Meanwhile sautée one onion chopped in thin slices in butter for about 10mins with some more thyme. Once the veggies are cooled scoop squash out of skin (and discard skin) and place onions, squash meat, and parsnips in blender. Add 4 cups of chicken or veggie broth and blend! Place back on heat and add salt n pepper! Voila!
